The default setting for the lock-screen is one minute, at which time does the iphone go to the same [sleep] state as when pressing the on/off button.

I'm thinking of changing the lock-screen prefs to several minutes or "never" and simply putting the iphone to sleep when finished using it. I'm getting tired of it dozing off on me too quickly.

Yes, it's the same thing. You can turn off the auto-lock and simply just press the on/off button when you want to turn the screen off.

The only reason I would advise against this is because if you accidentally hit the on/off button, the phone will turn on and you might not notice, thus draining the battery.
