Is there any application that will log to a file every x seconds the current data received/sent per second (in Kb/sec) through the network card in a similar way to the graph in Activity Monitor?

Or failing that, a terminal command?

Are you thinking of an entire network? If so if you set up a m0n0wall as your firewall it can log this....
 
No, just the traffic that goes through my ethernet card. Like when you open up Activity Monitor and click the "Network" tab.

Basically, a long-term version of that graph, that stores the data.
