Logging out of iCloud

I finally got on board and bought the iPhone 5. When I set it up, I signed into the iCloud account I established for my wife's iPhone. At the time I did not realize that this would sync all of our contacts l, calendar, pictures, etc. We finally got almost everything straightened out. I would like to set of a separate iCloud account for each device/user. How do I sign out of iCloud on the new device without losing the info already in the cloud?

How do I log out? The only option I see is delete account.

It deletes the account from the device, it does not delete anything on icloud itself.
