I have a first gen iPad Pro with the smart keyboard. I’m looking to get the latest iPad Pro. But in my search for a keyboard/case/stand I’m not finding any that do what the old one did: act as a stand and a keyboard, but not necessarily at the same time. The old smart keyboard could fold in such a way that it could be a stand while the keyboard was stowed away. It seems all keyboards now, apple or otherwise, only unfold into keyboard mode. This is annoying as I often watch tv or surf with the stand alone And only pull out the keyboard when I need to type a lot. Is there anything today that does the same thing? I find it odd that newer versions of something would actually lose functionality.

Have you seen the Logitech Combo Touch
I have, and it’s really nice. I like the backlight. But it seems like you need to remove the keyboard altogether to make it work as a stand instead of stowing it while you use it as a stand. I don’t want to go looking for a keyboard when I’m done with using the pad.
 
I must confess I got the folio cover for your intended purpose alone, but nowadays I leave it in the Magic Keyboard (white color) as surprisingly, it doesn’t bother that much. The floating magnetic support is also more sturdy and stable for “over table” touch.
