Is there any tool or script that can automatically remove the analytics or telemetry in the OS?
Maybe disable any services or create firewall rules which help block most of it?

I have not done so, but you could use Little Snitch/Lulu firewall soft.

And/Or piHole . . . IIRC, I had to Whitelist some apple telemetry a few years ago.

Thanks. I did this. Kind of a sledgehammer approach.
Any idea if this affects device plug-n-play functionality or automatic driver downloads, etc?
I haven’t used it, but every line has an explanation of what it blocks.
These block software update
127.0.0.1 swscan.apple.com # SoftwareUpdate.framework
127.0.0.1 qa2-int-swscan.apple.com # SoftwareUpdate.framework
127.0.0.1 swcdnlocator.apple.com # SoftwareUpdate.framework
127.0.0.1 validation.isu.apple.com # SoftwareUpdate.framework
