Looking for iPod Touch simulator app to connect to my iMac

I am visually impaired. I would like an app for iPod Touch that would simulate what is currently on an iPod Touch screen & send it to my iMac screen. Does such a beast exist? Thank you. PS: Also, is there a high contrast feature or app for the iPod Touch (that would be high contrast white text on black background)?
