I want an app that organizes things like a notebook. I've been playing around with a few, but I want something like OneNote. This way I can organize things like vacations, and different topics and in each topic have subtopics.

I personally like Evernote - it's comparable to OneNote, works across all your devices (including Mac) and is reasonably flexible. Give it a try if you haven't.
 
Seconding Evernote, it's simply the best cross device note taking and ideas capturing product available. Staggeringly brilliant in fact.
 
There is also Notebook from Circusponies. It used to be my fav app, but development has stalled and the iPad version was hands down terrible last time I checked.

Not the same as onenote but reasonably good as a journal app is also MacJournal. Good iPad app, but syncing was still via wifi last time I checked.

Like others, I have moved on to Evernote. I am not so blown away, cause it lacks formatting options and other stuff, but the integration across devices is top.
