I am looking to buy a new 27" iMac whenever it is updated.

I will be doing a lot of video editing with FCP 7 as well as some Photoshop and AE. Is it worth the money to upgrade from i5 to i7?

Also, if I get i5, is there any noticeable difference between 2.7 ghz and 3.1 ghz for render times?
 
Well if you're waiting for an upgrade, the comparing the current processor options isn't going to do much good. Which processors are offered at which prices could be quite different.

I would say so. If your wallet isn't going to take much of a hit, why not? There probably is a 10% difference between the 2.7 and the 3.1.
