On less-than-a-week-old MacBook Pro 13", I've found that one side of the "n" key is slightly raised and has a different, more mushy feel when I press it. What could Apple do about it if I brought it into an Apple store?

Probably press down on it and reseat it.
 
I have the same issue on my "right arrow" key. I plan to take it in and have them look at it just haven't gotten around to it yet.
 
A few years ago my friend's white MacBook had that with the "R" key. It turned out that there was a piece of styrofoam that had gotten lodged behind his key and prevented it from pressing all the way.
 
i had the same problem, but with my right shift key. they tried replacing it twice. then i came in again and they just exchanged it.
