I’m on a Series 7, updated to latest firmware within 48 hours of release in most cases.

for the better part of the last two months I have been losing miles of heart rate data when I run. I’ll look down at my watch and see the heart rate monitor spinning and grayed out on whatever the last reading was.

There’s no pattern to it other than it happening nearly every time I run. It happens in the cold, when it’s warm, sun/rain, indoor/outdoor, AirPods on/AirPods off, left wrist/right wrist, tight strap/loose strap…

I’m truly on my last nerve with this watch. I’m remarkably close to finally saying screw it and buying a Garmin.
 
Just a few suggestions,

Have you cleaned the bottom of the watch?
Is your band tight enough, or maybe too tight?
Arm hair or tattoos in the way?
Reach out to Apple and ask for diagnostic to be performed, just in case there’s a hardware issue.
 
No tattoos, not particularly hairy, I’ve adjusted the band to be tighter AND looser (as I said in the the OP), tried different styles of bands (sport loop, trail loop, sport band), and I clean the sensor off quite often.
