So my iPhone 3G is password protected but I did not have find my iPhone activated , let's say the punk who stole it somehow gets it working , will they have wiped out all my info? When an iPhone is password protects the only way to unlock it is to restore it I heard is that correct?
 
Unless you're dealing with the kind of 3-letter organization that really wants your data, you have nothing to worry about. I don't know what kind of "sensitive" information you might have had on it, but if it's just standard fare you could change your banking & e-mail passwords to be on the safe side.
 
You're probably fine, but in the future, there's a little feature that will wipe your iPhone of all data if someone gets the p-word wrong 10 times. If you are in the habit of carrying 'sensitive' info on your phone, that's probably a smart feature to engage.
