New to LTE. if I am in an area without LTE for a few days, will my battery life be affected if I leave it turned on?

The iPhone 5 uses one chip for all of its cellular communications. Therefor turning off LTE is irrelevant as the chip is still activated for HSPA+.

However I am on Verizon, so no HSPA. Still a little confusing to me why it would affect battery life if I'm not actively downloading on it; does it constantly search for an LTE signal?

I drove across the US with my Verizon iPhone 5 and never noticed any difference in battery life whether I was in an LTE area or not. I don't think it matters.

Yes it is always looking for lte signal.

From my personal experience, LTE and 3G show no difference in battery life. Both drain the same, which is significantly greater than wifi.
