On top of todays announcements, It seems apple has removed the base 256gb SSD and bumped it to 512 GB SSD (above is Australian Pricing)

Are you sure or are you just selecting the more expensive of the two M1 Mac Minis which is 512GB by default, it won't let you downgrade that to 256GB.
 
This is incorrect. The Apple Store still shows the 256GB as the base model. Same prices as before.
