Running updated latest big sur on a brand new Mac Mini M1 Most I can get with 4K is 60hz, I can drop it to 1440p and get 120hz but everything is blurry.

Tested with HDMI and USB-C. I never expected HDMI to, but USB-C does not either. For the heck of it loaded up Monterey Beta and instantly 4K 144hz was enabled without me changing anything.... Is 4K higher refresh rates broken on Big Sur?
 
what monitor are you using? Theres a small set of monitors that can do both 4k 120hz, but it has to be with displayport using usb-c to dp

AORUS FI32U, I'm using USB-C to USB-C. Its more of the point why it wont work in Big Sur, but works on Monterey forcing me to use the beta.
 
Perhaps Big Sur lacked DSC support? You need DSC to do 4K120 on DP1.4.

I noticed the same with my FV43U and M1 Air.
