What’s the impact of the 10 core GPU option of the M2 MBA on battery life during general day to day usage (nothing too taxing)?

Am in 2 minds.
Considering the 10 core with 16/512GB, but I do have a M1 Max MBP16 sitting on my desk for my more intensive usage (FCPX) so the MBA wouldn’t be used too intensively unless I am out and need to make a quick edit. Otherwise it’s just a portable day to day machine.
On the other hand, I am entitled to educational discount so thought I would overspec while I can considering I intend to keep it for several years…..

Any sizeable impact to battery life running the 10 core over the 8 core could be a decisive factor for me…..

Nothing noticeable. I might be getting slightly less battery life with my 10 GPU core M2 than I did with the 8 GPU core M1 but we are talking a few minutes over a 12 to 15 hour span. I usually end my work day after 8 hours with 40%-50% battery remaining.

how may hours do you realistically use on the battery each day?

My 16” is used on power all the time with Aldente Pro keeping the battery from charging as it’s always on my desk.

This MBA will be my portable machine so always used off of battery. I wouldn’t be away from a power source for too long I imagine, so charging wouldn’t be an issue, but just wondered if having the 10 core would impact battery life too drastically.

Nothing drastic at all.

The extra GPU cores aren't normally used unless you are doing GPU-intensive work, so in normal usage there is essentially no impact to battery life. If you were using them all, then there would be a small difference in battery life, but nothing very significant. Your screen brightness setting would likely have a bigger impact than the extra two cores.
