I understand the MacBook Air has a refresh rate of 60 hertz and no pro motion display. When connected to an Apple Studio display does this revert to 120 hertz etc and improve on the studio display?

Both devices are hardware limited to 60Hz. 120Hz would require different hardware such as a 120Hz capable monitor.
