Honestly I have never cared about high refresh rate using a mouse. For me it's important only while scrolling and in particular scrolling with my fingers as it makes it more real. I have 2 gaming monitors which I rarely use because I don't game and high refresh rates makes little difference. I am now using other monitors with higher resolution (4k) instead of those gaming monitors (1440p and 1080p).
I also have several Windows device with high refresh rate (Surface pro 11, Minisforum V3), and I barely notice the difference with mouse/trackpad and keyboard. But that's me, I am sure some say they can feel it so much they cannot use a 60hz monitor/computer

The 120hz on external is an absolute gamechanger for me. That was my complaint for so many years… I switched from m4 to m5 and typing this post with butter smooth animations at 120hz. The mouse feels finally MacOs Like. Was Never before for me. Always a weird delay and creepy mouse acceleration. Seems Like 120hz totally changed that behaviour for me. Im happy as can be. No, really!

I use an OLED 4K with 240hz at Home and an 4K 120hz at work. I guess my Macs wont be booting again any time soon.

As for external monitor, check if you have frame rate limit.
Accessibility - Motion - Limit frame rate

As for office, that is on MSFT. MSFT needs to be held accountable.

I dont get mine until tomorrow (will be returning because of the disgusting SSD speeds)

Love to hear this! My experience has been similar to what you described, just a general jankiness with mouse feel and acceleration on external display. Crossing my fingers the feature trickles down to older iPads similar to how Windowed Apps and Stage Manager did 🤞
