In Terminal, enter defaults write com.apple.appstore ShowDebugMenu 1. Quit and re-open the App Store app and you get a bunch of Debug options.

If you set the "Flying icon animation duration" to 0, the icon just fades in place into the Dock, which is kind of nice.
 
I tried setting the "Show install progress in Dock:" to "Applications stack", but it didn't seem to do anything. Anyone know what exactly that's supposed to do? My hope was that it would mean the application would be placed in the Applications Stack instead of it's own new spot in the Dock, and show the progress bar on the stack icon, but perhaps it only triggers one half of that setting, and the option to not put apps straight on the Dock isn't available here...

That's what I hoped too. If Apple thought it would be confusing, I don't see why considering that it would be like updating apps in folders on the iPhone.
