Am I supposed to do something overt to keep SENT emails?
I have five email accounts defined: MobileMe IMAP and 4 other IMAPs.
MobileMe seems to be the only one saving my SENT emails.
Actually, that's not entirely true. My other IMAPs are saving FORWARDED emails, but NOT new messages.

All 5 Accounts (in Mailbox Behaviors) have "Store sent messages on server" checked.

What am I missing (besides my sent emails:rolleyes:)?

There is probably another mailbox in the IMAP server that is being used for sent mail. You need to tell your client to use that. Apple Mail allows you to select say Sent Items and then in the main menu there is an option to Use This Mailbox for and then you get the choice so set it for Sent. Other clients are probably similar although I haven't used Entourage.
