How do you switch Mac Mail to dark background? I have the entire system on dark mode. However, Mac Mail emails still shows up as white background (the actually email). the rest is dark like the first and second column of the mail. When I tried to use the "Use dark background for messages" it just toggles the header (the top banner) to dark and white. Am I doing something wrong?

In Mail's own Preferences (Command+,) there is an option to turn on Dark Mode under the Viewing Tap.

I prefer looking at reversed text like that but have found it to be buggy in that some text in emails occasionally appears as dark on dark! I have not yet figured that out and my work around is just to select the text to get it to be visible.
