1) Is there anything Mac OS Mail cannot do that the MS Outlook email client can?

I have backups of my old email downloaded from the Outlook client. Can Mac Mail read these backups?

How do I migrate from the Office Outlook client to Mac Mail?

My university has an exchange server.

2) Do you use Gmail on the Mac Mail client?

Is there some way to be able to create Gmail labels using the Mail client?

Thanks!

I have used both the MacOS mail client and Outlook. Both are awful. I would recommend Spark mail client - both the MacOS and iOS apps are fantastic, for commercial and personal use.

And the best part - it's free! Don't look elsewhere!

Thanks! That's certainly an interesting take on the two :)
Outlook is hardly my favourite, but I get by and the latest versions have been somewhat colourful which is a nice break from the monotony of the past. Can you elaborate a little on what your principal problems with Outlook and Mail are?
Spark certainly looks good. But -
1- My university account will close soon, so having access to my emails in the future is a big deal for me. If I save emails delivered on Spark on my computer, will I be able to transfer and open these in, say, Mac Mail in the future?
2- Does Spark work well with Gmail? What about being able to use Gmail labels?
3- Are there any possible privacy issues with developers having access to all your emails?
Thanks!
