I use the stock mac mail program and I can't figure out how to attach files, that happen to be pictures, without having them display in the e-mail. Anyone know how to do this?

Why would you want to do this? As far as I know, inline display of picture attachments is there so you can see what you've just attached to the message. It's still a normal attachment, and won't necessarily display inline in other email clients (it will if that client supports viewing attached images inline). I'd be embarrased if I attached a photo to an email without checking what it is first, only to find out that I shouldn't have sent it - this feature avoids that potential problem.
 
yes, I have that *problem* as well...

sometimes you may want to send a lot of files as attachments but not to be displayed on the original email because -any reason - ... control click on the pic and select "View as icon" ... problem solved ...
