My Dad was using the mac mail (totally new system for us) ans he had a question about the spell check. When a word is spelled incorrectly and you click on it to correct it, he said he didn't see a list of choices of correctly spelled words. He was used to seeing that and then being able to just pick one off the list. Is this an option in the mac mail program?

He should be able to hold CONTROL and then click on it to find the correctly spelled alternatives. This is the same in almost all OSX apps although spell check is strangely not necessarily enabled in all of them.

That just seems to bring up a dialog box that asks when you want mail to check spelling. How then do you correct the words? Do you have to go to each individual word, or will it list the words that were misspelled and then give you several options to choose from? That is what he is looking for.

Well, under the Spelling menu that should come up when holding CONTROL and clicking in the New Message window, is Check Spelling As You Type ticked?
