I have an i7 Mac Mini on it's way to me this week and I'm trying to figure out the best way to set up RAID 0 using 2 internal 512GB SSDs.

I've read WAY too many articles on this and am more confused than ever. Some say I should use 16k or 32k for regular use (I don't edit videos), and others said that if using an SSD, than I need to use a minimum of 64k.

So what's the best option here?
 
Not sure which question you're asking...the 2012 Mac Mini is with firmware 6.1 that can only see 16GB ram. What are you doing with raid0? Will you use DiskUtillity to format the raid setup? I just picked up a 2011 Mac mini server I7 that I setup ZFS mirror with two 128GB and 16GB RAM for an overkill pfSense box. Is it block size?
 
The general consensus on this is to use smaller chuck sizes for large file I/O so that they can be spread across multiple disks more often improving performance. Smaller I/O should use bigger chucks.

To be honest, though, across only two disks, I am not sure it will make a very big difference. Since you seem to be using it for general purpose I/O (as opposed to specifically targeting video for instance) I would just go with 64k and call it a day.
