Mac mini 2018, Sonoma and second displays not working

Is anyone experiencing issues with a Mac mini (or other Mac model) and two displays? I have two LG displays connected via HDMI to USB-C (working) and HDMI to HDMI (not working). Even if I remove the working port, the non-working display does not get picked up. When I plug and unplug the port, the display flashes as if it wants to try and display.

I recall in previous years past, there was an HDMI standard or drive that Apple messed up and I think reverted.

Anyone seeing the same and or have a fix?

I will leave this here for others, but the fix was to shut the Mac mini down, remove the cables, power the device on without the second (non-working) display and then plug the non-working display in. And it works.
