My school is replacing the 27" iMacs in my classroom with new machines. Since you can't get large iMacs anymore, they are going with Mac Minis and external displays. Apple's are just to expensive (need 25 displays), so what are good alternatives and should they connect via HDMI or something else?

I'll reckon you could get a good deal from Dell -- wondering if they have an "education division"...?

If so, talk to them.
 
I just got a Dell model S2722QC, 27 inch, USB-C or HDMI hookup for my Mac Mini. Excellent, wonderful, beautiful . . . .. and cheap (currently $300.00 Amazon, Best Buy etc). Works with the MM out of the box easily . . . .
 
As a side note about connectivity - connecting the Mini to a monitor (in my case, an Acer), I found I would sometimes have the screen go blank and, with a wiggle or two of the mouse or tap on the space bar, it would come back. No rhyme or reason (and no settings that would cause that to happen) - and this connecting Mini to monitor HDMI > HDMI.
A little research on several Forums, and this seems to be something of a 'known issue' for some - but not all - Minis. On Apple Communities, it was suggested I try the Mini's USB-C to monitor's HDMI instead. This seemed to have resolved the issue.
