Turning my M1 mini into my video server. Currently using a windows machine. Only way to pull 2TB of videos off the windows computer is format the external to exFAT so the mini can read it. Any issues using exFAT with Mac OS On my M1 mini?

Nope.
It must run APFS in order to have an OS, to boot, and probably to work with the t2 chip as well.

Just formatted a 2GB mechanical hard drive on the mini exFAT. Transferred a movie file from main drive to external drive. No issues. Played the file just fine. Just hooked it up to my pc, which recognizes it, and transferring my movies at this time. Will post back results. If this works out, will be ordering a 2GB SSD for my movie streaming. Cooler to use than a mechanical drive.

Full success. No issues streaming to 2 ATV's. Found out, which I figured, you have to format the drive on the mini. Am currently using a mechanical 2TB drive in an older OWC external drive. Once formatted on the mini, hooked it back up to my pc to transfer around 600 movies. Hooked it back up to the mini. Took me awhile to figure this out. Don't use apple tv app. Will only recognize purchased/downloaded movies. But did use the app to change file location to the external. Other than a few more steps, don't have to use itunes anymore. The apple TV's recognize the mini going through computers on the screen of the apple tv. Have to turn on home sharing on the mini. Now to order a 2TB SSD to replace the mechanical drive.
