Mac Mini M1 for Media Center use - 8GB or 16GB ram?

Thinking of getting the Mini to use as a media center. Right now Im using my top specced late 2016 MacBook Pro and it feels a bit wasted. One question though, should i go for 8GB Ram or 16gb Ram? I notice my MBP utilizes at least up to 10gb Ram at times, but maybe the architecture of the M1 will make it use less? Primarily streaming via Chrome and using VLC streaming media files in the range of 1-15gb size.

Any input will be nice.
