I have two monitors that only have USBC as the output. I want to use both, but I also want to use one of those under the Mac Mini Docks, since they fit the Mac Mini so perfectly. Every dock I've seen that's shaped to fit under the Mac uses USBC, and I can't seem to find one that has an extra USBC port on the back. Is my only option to use a USB A Hub? The monitors are both LG UltraFines with only USBC in and can't be daisy chained...

You could use something like this if you're trying to get extra USB-C/ TB4 ports in that specific format. It's not cheap but it also has storage capability.
