I currently have my Mac Studio and Mac Pro ‘networked’ by connecting to my broadband hub with Ethernet.
This way I can screen/file share.
I want to add my G5 also, but have no spare Ethernet ports.

What is the best option for connection..?
Is it just a network hub, with two macs connected to, then connect that to the broadband hub?

Something like this?

Your Mac Studio is the only computer you list that can run faster than 1 gigabit ethernet, so yes, you might as well stick to a cheap 1gigabit switch.

In retrospect I might get away with an Ethernet splitter.
My additional Mac’s will not be on at the same time, only one or the other so they could share the same port on the hub.
I only access them occasionally via screen sharing to grab old files etc.

A splitter is probably a false economy unless it's impossible for you to get power to a switch.
Proper 1GB switches like the one shown are pretty cheap, and (unpowered) splitters have major limitations.
