So we have seen that the current 45nm Nehalem range will work on Mac Pros, but there seems to have been a number of posts where people plan or suggest the upcomming 6 core 32nm Westmere Xeons as an upgrade for the future.

According to this thread X58 chipsets require a BIOS update for them to work.

It seems unlikely to me that they will work on the Mac Pro 2009 firmware without an update or that Apple will provide one.
 
I believe that Apple uses the 5520 chipset. Nevertheless you are quite right about :apple: 's reluctance to issue sensible EFI upgrades. They did not do it for the X51xx/X53xx -> X52xx/X54xx transition on the 771 socket. So I agree it is feasible but unlikely to happen.
