MP 1,1-5,1 Mac Pro 2012 and High Sierra or windows 10?

I have both 1080TI (macvid edition) and native 2080ti. I am debating if I should go back to high sierra with 1080ti
or stick around with windows 10? Will I miss out any important feature for other OS like Mojave or Catalina?

Current mac pro setup
dual 3.46 Ghz processors
2080ti
NVME with pcie card
3.1 and 3.0 USB Card

I am not sure if High Sierra supports pcie based NVME. I also have to change Video card from 2080ti to 1080ti if
I want to go back to high sierra for nvidia drivers.

Any pros and cons would be helpful!
