So according to some posts and browsing ebay/amazon/craigslist the 2008 3,1 2.8ghz quad core models seem to be going for in the $600-$800 range.

I am looking at this model:

Mac Pro 3,1
2x Quad Core 2.8GHz (8 cores total)
8GB RAM
320GB system disk
3x 500GB storage (1.5TB total)
2x NVIDIA GeForce 570 1GB video cards

I would guess stock (without the video cards) would sell for $800, but when you add 2 video cards (gtx 570s) that would be about +$200.

So for $1000, would this be a good deal?

Yep I think it's a good deal for that model specially if it's in Mint condition. Good luck!
