Mac Pro: Can we put anything in it?

I raised this can of worms a few weeks ago in the Core 2 Duo threads.

We're now working with EFI based machines and not Open Firmware. Does that mean we can just pop in any PCIe video card with proper driver support and have it work?

I know some equipment will need Windows. The Mac Pros support Boot Camp right? I know I need at least Windows XP Pro for the 2 CPU sockets.
