I've been watching the refurb page for the last couple of months and a single core 2.8 quad has finally come up. I hesitate now because:
1- we have inched really close to the MWSF where new Mac Pros are likely
2- SL is ahead of schedule and may be released with new machines in the new year after MWSF
3- New Mac Pros will push down the price of existing models even further
On the now side:
1- I can use savings over a new purchase to buy extra RAM
2- I get to use the machine for a month and a half before new stuff comes out
3- the current Mac Pro has great specs already and a new machine may only be a modest speed bump
4- Snow Leopard will improve performance when it does come out
If I go now, 2.8 quad or 2x2.8 quad? Both are on the refurb site now.
