Hi,
If I purchase a Mac Pro via the education store (as I work in education), can I set the warranty up under a different name and address?
I'm looking to purchase for my brother but may as well use my education discount.

I've been informed the warranty is set up for the person who registers the system?
So if I purchase and give him the system, he can set up and register in his own name?

The Apple warranty or AppleCare follows the device, not the owner. You don't have to do anything to transfer the warranty. Anyone with physical possession of the device can have warranty work done on it. It's tied to the serial number of the device, regardless of who owns it.
 
AppleCare only checks the serial number to see if it's currently under warranty coverage. It doesn't matter who it's registered or initially sold to, even through the education store.
