My current 12 core mac pro is running fine. I was reading about the above xeon processors that i have, whether people have overclocked it for the mac. I know on youtube they show, for the pc market, users overclocking it but not sure how viable the performance improvements are if any.

As far as I know, there's no way to overclock them. Years ago, there was an app that allowed overclocking of the 3,1s via software, but at some point, it got broken by OS X updates. Other than this, I am unaware of any other overclocking options for any of the Mac Pros.

If they can be overclocked, it can provide improved performance but probably at the expense of increased heat and power consumption. Same as with overclocking any other CPU.
