for MacBook 12" 2017 latest model, Is there a performance difference for basic Mac use between the 8 and 16gb ram machines? What about if one was to install the patch to run Sequoia? Wondering if I should pay more for 16gb. Those are rare to find too.

Having more RAM allows for more apps to run in the background or multiple windows open without affecting overall performance of the computer. When the computer starts to run out of memory (RAM), it begins to use the storage drive as additional memory and performance suffers and is very noticeable.
