Can someone please tell me from experience or knowledge how likely this store is to have the
- 13 inch Macbook air, 256 SSD and 8GB ram and the standard 1,8 cpu
in stock?

Yes they hold the top end spec 13-in Air in stock (1.8GHz processor, 256GB flash storage, 4GB RAM) and can do an upgrade to 8GB RAM in store for you.
