I currently use a 2015 MacBook Pro for audio recording and live performance. I mainly use Ableton Live and a stack of synthesiser and effects plugins.

The MBP is getting a bit long in the tooth, and I'm considering a replacement laptop. Does anyone have any experience of using the MBA M1 for similar applications?

I use an 8GB/512GB M1 Macbook Air along with my Mac Studio, I've been very satisfied with it for audio recording and production.
From a technical perspective I think certainly a 16GB M1 MBA would wipe the floor with your seven year old MBP.
However I'd first check if the audio interface, DAW and plugins you doubtlessly use will work properly on an M1 Mac, possibly by looking at the mfrs websites or asking directly.
