Whenever I leave my office I switch off my MacBook Air and put it in my rucksack. When I have walked a few minutes up the road I get an alert from Find My saying that I have left my MacBook Air behind. Is it only the iPhones that keep sharing their position when they are turned off?

I don’t have the ability to enable notify when left behind on my M1 MacBook Air. The switch in the iPhone Find My app is missing. If you don’t have such a switch either, then I would assume it’s a bug.
 
It likely because the MBA doesn’t have cellular so once it looses connection to wifi that will be it’s last known location, and so find my will presume it’s been left behind.

You should be able to specify location for it not to alert you when it’s been left behind within the Find My app.

Alternatively tether to your iPhone and just put the Mac to sleep that may then be able to achieve a constant connection and prevent the alerts possibly.
