I have an ITouch and like the icon look displayed. I understand that the MacBook does not have the touch screen but is there an app that offers a similar look on the desktop screen of my MacBook to my Itouch?
 
No. I doubt it. Closest thing you could get would be a background picture of the iphone layout like this:

You could just apply new iPod-like icons to the stuff on your desktop. That would be kind of tedious though, if you have more than like 10 items there.

Not quite an Ipod Touch but it is actually a pretty decent way to see what all is installed. You can hide icons so you are only presented with useful apps.
