Do macbook docks that save up lots of space work with just hdmi cables? I am planning on buying macbook pro to slowly replace my desktop because it will save lots of space and wanted to know if I can use my regular monitors , not planning to buy apple ones.

Thanks guys!

Not sure if the dock's have built in HDMI ports if that's what you're asking. Just check the specs online for the docks that you are interested in. Most docks just hold the MacBook Pro in place, and turn it in to an iMac essentially. You can pair a Bluetooth/wireless/wired enabled keyboard/mouse and use it like a desktop, while also leaving more space on your desk.

Yes you can use your rMBP with any monitor, you are not restricted to on Apple branded monitors.
