You can use the built in microphone or an external microphone with a 3.5 mm TRS connector and use QuickTime Player > File > New Audio Recording for simple recording needs or Audacity for more advanced recording needs or you can even use GarageBand (free with every Mac, thus it should either be still installed on your Mac or be available via the second grey Restore DVD, that came with your Mac).
 
I would definitly go with the external mic for recording bird calls. Your best bet would be to use a separate recording device and transfer the files to your mac.

So sorry it took a while to get back to you. Tried Quicktime and it works perfectly .. thanks for the good advice!:)

Apologies for the time taken to reply. Your advice regarding a separate recording device is an excellent one and I will acquire when I get back to civilization. At the moment living in the wilds of Costa Rica...:)
