Bought my MacBook Pro on 2nd November 2009 and was thinking about extending the warranty for a further two years with an AppleCare Protection Plan but had a look at my warranty status on the Apple website and it is showing as expired since 30th October 2010. Surely, it shouldn't expire until tomorrow?

I've e-mailed Apple with a copy of my purchase receipt in hope that they will extend my deadline until tomorrow but I fear I won't receive a reply from them until tomorrow, in which case, their reply will be pointless anyway.

What can I do?
 
I'll call them. I only e-mailed so I could send them a copy of my purchase receipt.
 
If you bought the MPB on Nov 2/09, the warranty expires Nov 1/10, that's today. They may give you a couple of days grace due to the expiry date mix-up.
 
as long as you are not trying to get a major repair done right now and are only looking to add the Apple Care ... I think they might extend it until Oct 30th

like the above replies suggest ... I would call them first thing in the AM.
