I have a question about my late 2011 macbook pro. Is it better to let my battery completely die before charging or is it better to keep it plugged in when I can and keep the battery mostly charged?

There's no need to drain it before recharging. You can recharge anytime. This should answer most, if not all, of your battery questions:
 
apparently its best to leave it plugged in, letting it fully drain to calibrate about once a month or so.
