There is probably an easy solution to this but so far it has eluded me. When I connect my MacBook Pro to the Caldigit USB-C dock the Mac dock and menu bar switch over to the external monitor even though it issn't turned on. Is there a way to prevent this from happening? Thanks for any help.

Set the MacBook display to be your primary display by dragging the menu bar to it in Display settings.
