I have a question, it is possible to have two additional monitors working with a Macbook Pro 15inch core i7 & a Matrox Dual Head 2 Go Analog through Mini DisplayPort ????

It's possible but the analog version only supports 2 x 1280x1024 so real world usability depends on the displays you're planning to use as it's not nice to have good monitors and then be stuck with bad resolution. It's compatible with OS X 10.5 and 10.6.
