Macbook Pro, import of DV Tap

Hi all. Wonder if anyone out there can offer some tech help. I've a 16 inch 2019 Mac Book pro, and I'm importing dv tapes. After working now to do this, the recording seems aok. However, two issues I wondered if anyone could help. 1) How to store the imported films into some sort of order rather than random 2) Previous imports seemed to have disappeared overnight. They are not there in I movies. Where might they be? 3) When I stop importing film, a processing occurs and seems to go on and on. Is this normal. Any help would be very welcome, sorry but I'm a bit of a dummy guide for Macs bloke. Thanks a lot for any answers
