Hi

When I run use my macbook pro, I have about 300mb ram which is not in use. I still think it's a bit slow when I open new applications and so. Do I need more memory than the 2gb I already have?

Well, it depends on what you are using your MBP for- but usually 2 GB is sufficient. if you have an older macbook pro you won't be able to put more RAM in it anyways.
 
Does it just take a long time opening applications?

When multiple programs are open and you switch between them are their sudden slowdowns or freezes waiting for the other program to respond?

For just slow application load times it could very well be your hard drive. If you have a 5400RPM model you may consider 7200RPM. This also applies to slow file transfers.
